– Happy Pancake Day Guys –

Today (While randomly listening to Maroon 5 “Animals”, yup weird) I have decided to share with you my pancake recipe, until now it was top secret but I thought it was THE occasion to actually spread the pancake love. So I hope you will try it, enjoy it and share it. Most of all, happy pancake day, don’t forget Maple syrup is your best friend today.

How do you like you Pancakes, tell me ? I like mine Buttery and full of real Canadian Maple Syrup.

Ingredients

1 tablespoon baking powder
1 pinch of salt
1 teaspoon white sugar + 1 of Vanilla Sugar
2 large eggs (already beaten)
25 grams butter (melted and cooled)
300 ml milk
225 grams plain flour
1 teaspoon of Vanilla exctract

Of course butter for frying as well

How to do it

1. Mix all together in the bowl of an electric batter and mix. But if you are mixing by hand add by order. Mix all dry ingredients first and then the wet, add milk last.

2. Pour mix in a jug, which is a much easier way to control the amount you want to put in your fry pan.

3. Pancakes are really easy peasy, grease your pan than pour a tiny amount (when I said tiny you decide what size you want, but remember they expand a lot) then when one side is blistering and bubbling just flip it and cook the other side.

4. Eat! It’s Pancake day ! With that recipe I can do around 12 huge pancakes or 18 medium size one. Add butter, fruit, maple syrup, sugar or lemon.

Enjoy, and don’t feel guilty, who cares ?
